Summer Spaghetti

I had an abundance of cherry tomatoes this summer and wanted to use them up so they would not spoil. My boyfriend had come up with a recipe where we could use them and enjoy a great tasting meal.


Summer Spaghetti

3 Chicken breast lightly grilled
12 or more Cherry tomatoes
olive oil
1 1/2 cup sliced mushrooms
3 tablespoons pesto
1 clove garlic
1/2 salt
1lb fettuccine noodles
Add sauce ingredients to pan and cook. Cut cherry pomatoes in half and add to sauce. Cook pasta until done. Serve fettuccine noodles on a plate, add sliced chicken, pour sauce over the dish and serve.

Apple Pie

FALL - the time of the year when apples are in full harvest.

I have been craving apple pie for a while now and decided to pick up some and make this delicious pie. The recipe is below.

APPLE PIE

8 Gala apples peeled, cored and sliced
2 Tablespoons lemon juice
1 cup sugar
1/4 cup flour
2 tsp cinnamon
1/2 tsp nutmeg
2 pats butter
1 egg white
Favorite Pie crust recipe

Pre heat oven to 425 degrees. Peel , core and slice apples and put in a bowl. Pour the lemon juice over the apples and stir. Mix sugar, flour, cinnamon and nutmeg with the apples until they look like the are all coated. Pour mixture into an pie pan and add pats of butter. Brush the top pie crust with the egg white. Bake at 425 degrees for 15 minutes then bake at 350 degrees for 40-45 minutes or until the crust is golden. Let stand 15 minutes. ENJOY!!
